We have been eating some really good (and really SIMPLE) dinners lately, and I thought it would be a good time to share with you what we have goin’ on in our house.
I am sharing some photos I took of my actual dinner plate to give you inspo. I don’t do a lot (or any) recipe developing on my site or for my clients because I find that a bit overwhelming, but I do like researching different recipes and flavor combinations then just throwing something together. 1. Quinoa & sweet potato burgers served with black bean, corn, feta and avocado salad.
This was so good and really filling, plus all plant-based! The burgers did take some cooking time, but you could throw this together a lot easier if you already had some sweet potatoes and quinoa cooked! The corn & bean salad I had on the side didn’t require any cooking.
2. Yellow rice, marinated tofu and salad.
I marinated tofu in a mixture of soy sauce, mirin, sesame oil, rice vinegar and sriracha and made sure there was enough to coat it all and let it sit in the fridge for about an hour. I then tossed it in some starch and baked it, then tossed it in the leftover marinade. Cooked the yellow rice according to the package (I used Vigo) and added some chopped olives. Just some kale salad on the side!
3. Mini turkey meatloaves with farro mixed with pistachios, feta & parsley, and a salad.
I never really know what to do with ground turkey and I needed something quick! I mixed about a pound of turkey with feta and chopped kalamata olives and pressed it into a muffin tin. I was going to add parsley but I forgot! I made one of my favorite side dishes: farro mixed with feta and pistachios. Noticing serious mediterranean vibes this week as I am going through all of these!
4. Spaghetti with cherry tomatoes and basil with a salad.
An absolute staple in our household all year: spaghetti and salad. I have a post on grains coming up where I share my favorite go-to whole grains and I just want to be clear that pasta never makes the list. My husband and I grew up eating Italian food that our families had grown up eating, and bean or whole wheat pasta was just not included. We prefer the good stuff. This night it was simply tomatoes cooked down with garlic, tossed with basil and served with a big fat salad.
5. Farfalle with red onion, peas and ham.
The farfalle with onion, peas and ham has to be my number 1 right now. It literally takes from the time you put the water on to boil to when you mix it together in the bowl, which is under 20 minutes. I had a bit of ham in the freezer I have been meaning to use, and we always have frozen peas. Add some pasta and a red onion and you have dinner!
Also, these meals are all pretty cheap. I am not sure what your grocery bill has been looking like lately, but mine is climbing each week no matter what I do! 💸 I tend to make sure that I am reusing ingredients that I buy also. If I find a recipe for something I want to try that calls for a special ingredient, I think about what else I can use that ingredient in. That’s part of the reason you are seeing feta, kale, olives and pasta on repeat. Also, lots of canned (corn, beans), frozen (peas, ham) and pantry staples (farro, quinoa, pasta) to make things super easy.
