Who knew that school would leave a girl with such little (read: no) time to blog?! Over the holidays I will have some time to pop in and share some of what gets me through the this time of year, like workouts and cookie recipes. For now, I’m just going to leave this pumpkin spice granola bar recipe below since I’m still hanging onto pumpkin spice season for dear life! This is a hybrid of my favorite healthy cookie recipe and my dad’s granola bar recipe. I plan to make my own pumpkin butter this weekend since Trader Joe’s does not supply it for me throughout the year, only seasonally, and that’s a problem for me. I am excited to give it a go so I will definitely share that recipe as well if it turns out!
Chewy Pumpkin Spice Granola Bars
3 cups rolled oats
1/2 cup ground flaxseed
1 cup sliced or chopped almonds
1 cup protein powder (I used a standard vanilla whey)
1/2 cup + 2 TBSP cinnamon baking chips
3 egg whites
1/2 cup pure pumpkin puree
1/4 cup almond butter
3/4-1 cup brown rice syrup
1 1/2 cups crispy rice cereal
Mix in this order, bake at 350F for 20 minutes on parchment-lined 10×14 baking dish.
